minty chocolate slices

Our friend Kim, sent her son to leaderhsip group the other night with the yummiest cookies....Brett loved them...so thought I would share recipe here! Thanks Kim:)

Minty Chocolate Slices

1 c. sugar
2/3 c. butter
1 egg (unbeaten)
1 tsp. vanilla
few drops mint extract
1 1/2 c. sifted flour
1/2 c. cocoa
1/2 tsp. baking soda
1/2 tsp. salt
1 c. finely chopped nuts

cream sugar and butter until fluffy; add egg and flavorings, beat well. Sift flour with cocoa, soda, and salt. Stir into first mixture. Add nuts and mix well. chill dough shaped into 2 long rolls about 1 1/2 inches in diameter. Wrap in waxed paper; chill and store in refrigerator. when cookies are needed slice thin and bake on ungreased baking sheet at 375 degrees for 810 min. makes about 6 doz.

double mint slices: put cooled cookies together; sandiwch style with creamy mint filling:
3 T. soft butter
2 1/2 c. sifted powdered sugar
2 T mlk
1/8 tsp. mint extract
1 or 2 drops of green food coloring

combine all ingredients and beat with mixer until smooth and creamy.
